Vinai Valpolicella Ripasso 2015
The grapes are harvested in mid-September and are pressed soft, then fermented and macerated for approx. 10 days at a temperature of 25 °C. After fermentation, the wine is separated from all the solid parts (skin and seeds) and stored in stainless steel vats until the end of December – beginning of January, after which the wine is then poured onto Amarone skins and left for approx. 4 – 5 days at a temperature of 15-25 °C. The wine is then separated from the skins and aged in French oak barrels. The wine is finally bottled in early spring after approx. 12 months aging.
An intense ruby red wine. Aroma of cherries, spiced with a touch of dark chocolate at the end. Soft, velvety with rounded tannins that are well balanced in the acidity.
Served at approx. 18 degrees for grilled red meat or with mature cheese.
Grape: Corvina Veronese, Corvinone, Rondinella.
