Red Wine & Chocolate

Vinai Valpolicella Ripasso 2015​
The grapes are harvested in mid-September and are pressed soft, then fermented and macerated for approx. 10 days at a temperature of 25 °C. After fermentation, the wine is separated from all the solid parts (skin and seeds) and stored in stainless steel vats until the end of December – beginning of January, after which the wine is then poured onto Amarone skins and left for approx. 4 – 5 days at a temperature of 15-25 °C. The wine is then separated from the skins and aged in French oak barrels. The wine is finally bottled in early spring after approx. 12 months aging.​

An intense ruby ​​red wine. Aroma of cherries, spiced with a touch of dark chocolate at the end. Soft, velvety with rounded tannins that are well balanced in the acidity.​

Served at approx. 18 degrees for grilled red meat or with mature cheese.
